Marina Bay Sands offers so many wonderful places to eat, diners really are spoilt for choice. On Saturday night we booked to have dinner at db Bistro & Oyster Bar, the eatery of celebrity chef Daniel Boulud.

Seated facing the semi transparent screened kitchen, we soon forgot about the Marina Bay Sands Mall setting and there was a complete sense of being in a French Bistro of the highest regard, with the welcoming and attentive service to match this fine dining establishment. 

After ordering our cocktails, I went for the Hemingway Daiquiri, and also had a taste of the equally delicious Southern Peach and Boulevardier that the others had ordered, we were brought some freshly baked gougeres and a selection of artisan breads. 

To start we ordered a selection of dishes for the table: the Jumbo Shrimp Cocktail ($39), Grilled Octopus & Calamari Ceviche ($30), Chilled Foie Gras ‘Terchen’ ($36), and a half dozen of Seasonal Oysters ($40) 

The Grilled Octopus & Calamari Ceviche was my personal favourite, closely followed by the delicious Foie Gras served chilled with Organic Honeycomb, Hardnuts and Brioche. Although I did not try the oysters for myself, I was assured they lived up to their description of ‘Singapore’s finest’, particularly the Oysters Rockefeller prepared by the chef upon special request.

For my main course I went for the Petit Filet Mignon ($55) which was served with fries and a choice of Bernaise or Peppercorn sauce, whilst the others chose the 300g USDA Prime Ribeye ($75). We also ordered a side of Lobster & Cauliflower Gratin ($25) to compliment our mouth-watering steaks.

The food was divine, and it was the prestine waiter service and communication from the chefs via our personal server which really made our dining experience at db Bistro & Oyster Bar a special one.
